Oh, I’d definitely wow them by combining flawless technique with a bit of creativity and a touch of the unexpected! I’d start with a classic dish—maybe a perfectly cooked risotto—but then I’d add my own twist: edible gold flakes (because, why not?), and a surprise burst of citrus to balance out the richness. And, of course, I'd plate it like a work of art—because we all know the judges eat with their eyes first!
If they asked for something sweet, I'd serve a dessert with layers of texture—like a chocolate mousse that melts in your mouth, paired with a crispy praline and a tangy fruit compote. You can’t go wrong when you balance richness with freshness!
But really, I’d just make sure I had a big smile and a confident “let's make this magical” vibe—because cooking is all about passion and fun, right?
What is the most innovative dish you have created for a wedding?
One of the most innovative dishes we’ve created for a wedding was a deconstructed seafood tower. Instead of the traditional multi-tiered display, we served individual portions of lobster, oysters, shrimp, and crab claws in beautiful, edible shell bowls. The twist? Each “bowl” was made of crispy, baked parmesan cheese, adding a savory crunch to the delicate seafood. We paired it with a fresh citrus aioli and a micro-herb garnish, which elevated the whole experience.
It was not only a stunning visual centerpiece but also a completely unique way to enjoy seafood, turning it into an interactive and personalized experience for guests. They absolutely loved the concept—and it was a huge hit!
What is the food of love?

It brightens up the flavors in almost any dish and adds a burst of freshness that can take it to the next level.
