Hi I’m Louise and I run Louise Hayes Cake Design, a luxury wedding cake design service based in Hampshire, covering the Home Counties and beyond. I specialise in delivering bespoke, modern but timeless wedding cakes for my couples. I collaborate with my couples to design a wedding cake that reflects them and their wedding styling. I place a huge emphasis on flavour, using organic and locally sourced ingredients where possible to ensure my cakes taste as amazing as they look. I also offer sweet treats/ favours such as macarons, cupcakes, cakesicles and sugar biscuits to accompany your wedding cake.

What is your signature cake?

Multi-tiered, elegant sugar paste cakes with sharp edges and a modern style. Often adorned with sugar flowers displays, textured design elements and pops of colour

What is the most original creation you have baked for a wedding?

I once made a very tall, multi-tiered contemporary square cake in midnight blue with gold sugar blossoms shaped into a crescent to compliment the celestial theme of the couples wedding.

Describe how you got into making wedding cakes.

I had a number of years running a celebration cake business and started getting requests for wedding cakes. After delivering my first wedding cake, despite the stress and nerves, I knew immediately that this was where I wanted to take my business.

What would be your show stopper in the Great British Bake Off?

It would definitely be a cake (I’m hopeless at bread and pastry!) - it would be something very structural that had a real wow factor - it would be bold and contemporary and would push the boundaries!
