Do it your own way! You don't need the million and 1 items people say you do, just the things that are important to you.
What is your favourite personal touch you have seen at a wedding?
4000 paper cranes hanging from the ceiling, all hand made by the bride and groom!
Describe your typical process with a couple.
Approaches vary, some clients have strong ideas of what they want and others really haven't decided. It's my job to help them find the perfect design for thier day. We tend to talk ideas, make up a mood board, and chat about what's important to them. In this way we can create the cake design together and then I work to make it happen seamlessly for them.
What is your signature cake?
One feature of my cakes is that I have an extensive menu, much wider than most cake makers. These recipes have all been tried and tested and the fillings and flavours can be mixed and matched. My flavours are all naturally sourced too. There are no chemical flavourings used in Kasserina Cakes, which I think (and am reliably informed by my clients) gives a much better flavour with no synthetic aftertaste.
What is the most original creation you have baked for a wedding?
My favourite cake is pretty much always the last one I made... but I did make an epic 8 tier cake for my stepson's wedding, which was a pile of books with the lovely Ronnie (their cat) asleep on top. It may not be my favourite style, but it was very special for different reasons.
Describe how you got into making wedding cakes.
As a child I watched (and I say helped, but she may disagree) my Mum make wedding cakes. Later she bought a shop that sold cake decorating tools and consumables so I went on a couple of decorating courses so I could advise customers on how to use the tools. The bug well and truly bit, I made my brother's wedding cake and I've been upping my game ever since.
What would be your show stopper in the Great British Bake Off?
I could never be on the Great British Bake Off. They don't give you enough time to do the job I'm capable of and I never do a half baked job. I'd probably make one of my cocktail inspired recipes though, so I could bribe the judges with booze ;). Pinacolada maybe? Pimms summer cup? Mojito?
